Traditional Sweet Potato Bread




SWEET POTATO BREAD

2 large sweet potatoes, boiled
1 cup corn meal
1 cup plain flour
1 tsp. baking powder
1 to 1 1/2 tsp. salt
2 tbsp favorite honey
2 tbsp. melted butter
1 1 /4 cups warm milk
2 eggs, beaten
1 greased loaf pan

1.  Preheat oven 400 degrees. Peel the potatoes and cut into cubes.

2.  Sift the dry ingredients into a mixing bowl.  

3.  I another bowl mix the wet ingredients.  Pour this into the dry ingredients and mix well.  Fold in the sweet potato chunks, pour batter into greased pan and bake for 30 minutes, check to make sure it's not browning too fast, if so cover. Turn heat down to 325 and bake an additional 30 minutes.  Test with knife for doneness.  Serve warm with good fresh butter.  


VARIATIONS:

You make this with mashed cooked sweet potato.  It can also be made with raw shredded sweet potato.

Chopped nuts and/or dried fruit like raisins can be added.

These can easily be made into mini loaves by using multiple mini loaf pans.  These are great for gatherings around the holidays or given away as gifts.

This is really funky looking when made with purple sweet potatoes.

Substitute maple or even sweet molasses for the honey.

Use some other kind of flour other than wheat, like rye or buckwheat

Use some other kind of pan other than a loaf pan, like a bundt pan.
