'Ulu Kalua AKA Baked Breadfruit


Originally these were baked in underground ovens called imu, it was basically a steam oven.  In modern homes, this can be reproduced in the a stove oven with good results.  You can go savory or sweet with the finished product.

1 ripe breadfruit
Water for baking
Butter (optional) or favorite flavored oil.
Salt and Pepper OR sugar

1.  Preheat oven to 350º.  Wash the breadfruit and poke it in several places so that it won't burst.  Place this into a baking pan and pour water into the bottom of it.  Bake for 1 hour.

2.  Remove from oven, let cool for about 10 minutes, then cut out the core, beware of steam (in some cases the core can be pulled out).  Cut in half and butter or oil well (optional), then sprinkle well with salt and pepper or with sugar.  Scoop out flesh as needed, or further cut in slices if there are more than two diners.
